Making the change to a plant based diet.
The first question most people ask after deciding to adopt to a plant based diet is “what will I eat?” The key is not to focus on food that you no longer are eating, but instead focus on the great variety that will now be opening up to you! I eat more variety now than I did before adopting a plant based diet.
Start with small steps. Try a new fruit and vegetable each week, cook your favorite vegetable differently, or even eat it raw! We eat broccoli raw every week now (in the past I served steamed and smothered in cheese!). Also, Vegenaise makes a great dip for raw veggies. My focus for most meals is to make sure I have a green (vegetable), bean (or other plant based protein) and a grain. I try to keep it simple when meal planning because time is precise in the evenings!
If you are not in the habit of meal planning currently either, I’d encourage you to start planning some if not all of your weekly meals. This not only cuts down on grocery trips during the week, but will help you stay on track. A drive thru is an easy solution if you’re tired at the end of the day and do not have a meal planned for the evening.
